Founder & Winemaking Consultant
Salvatore Leone
Our Founder, Salvatore, is an independent winemaking consultant from Sicily with 24 years of experience and 38 vintages behind him. His career has spanned seven countries across both hemispheres, encompassing a wide range of climates, grape varieties, and winemaking philosophies—from boutique, hands-on projects to global productions of up to 25 million bottles per year. Along the way, he has worked with renowned names including Pernod Ricard, Leasingham, and Bodega Familia Zuccardi.
​For the past 13 years he has been advising and shaping projects on English soil. Salvatore directs the winemaking, making key decisions, defining the identity of every project with integrity and intent. His approach is grounded in deep experience, quiet wisdom, and rare humility—allowing site and season to speak while guiding each wine to its full potential.​​

Assistant Winemaking Consultant
Petros Potsis
Winemaker, Petros, began his journey in wine through hands-on family traditions, foot-stomping grapes in his grandfather’s pergola vineyard in Greece. This early, connection to winemaking laid the foundation for a path that combined formal study with practical experience, from WSET qualifications to a deep immersion in the English wine scene. His career progressed into senior production and cellar leadership roles in the UK, including overseeing large-scale sparkling wine operations at Ridgeview and later stepping into head cellar responsibilities at Itasca. Alongside his work in England, he has gained international experience, collaborating on Bendito Destino, a project in Ribera del Duero, Spain.
Petros brings broad production expertise, infectious energy, and a restless enthusiasm for pushing boundaries while refining his craft.

Winemaking & Operations Coordinator
Molly Tawse
Winemaking and Operations Coordinator, Molly, is our British-born team member who ensures everything stays on track. An ex-sommelier at the acclaimed wine bar and restaurant Noble Rot, a wine writer for publications such as BYOB, and an aspiring winemaker, she brings a rare breadth of perspective to the team. She combines a strong theoretical foundation through the WSET Diploma with hands-on harvest experience in both France and England, giving her a grounded understanding of wine from vineyard to bottle. Her experience spans the full spectrum of the wine world—from production and cellar operations to communication and sales.
Equally comfortable in the winery and behind the scenes, she manages the logistical backbone of each project with sharp eye for detail and a calm command of operations to ensure ideas, people, and vintages move seamlessly from plan to practice.
